Production method

Harvest from 1 to 15 September, spontaneous fermentation for each variety in purity, maceration for up to 20 days, aging in used barriques of various essences and origins for 12 months, followed by aging in the bottle for another 12 months.

Tasting notes

Very intense ruby red color, the nose perceives fragrances of red fruits accompanied by a spicy touch of pink pepper. On the palate, the fruity notes of black cherry and strawberry are initially felt, consistent with the aroma, then a spicy flavor emerges in the center of the mouth. The volume of the wine expands and the finish is very long, characterized by a mineral note.

Possible combinations

It goes perfectly with roasted red meat, game and aged cheeses.
