HARVEST PERIOD : SEPTEMBER – OCTOBER
VINIFICATION AND AGING: After an initial selection, grapes from different plots are pressed and vinified separately. The fermentation takes place in steel tanks and Austrian and French oak barrels, where the wines continue aging until June, when they are blended. Further refinement continues in the bottle before commercial release.
TASTING NOTES: Tenuta Grimaldi shows a straw yellow color with greenish highlights. Notes of flowers and white-fleshed fruits are harmonized with hints of anise and slightly minty aromatic herbs. The vibrant drinkability is balanced by the wine’s softer components, finishing with a savory and persistent ending.
DISTINCTIVE PEATURES A wine with marked acidity, making it well-suited to evolution and aging; the sapidity and minerality reflect the terroir where “Tenuta Grimaldi” is born and grows.

PRODUCTION METHOD AND FOOD PAIRINGS
With Tenuta Grimaldi, we move to a higher level, featuring a more structured wine. The grapes are
hand-harvested, and vinification takes place in both stainless steel and wood. This is the only wine
without a fantasy name, as it bears the winery’s name and represents its flagship expression.
For each vintage blend, only those wine batches that are not yet ready at bottling—but show strong
aging potential—are selected. The wine evolves over time through bottle aging, which begins in the
cellar. In fact, it is released onto the market approximately two years after harvest, including one
year of bottle aging in the winery.

- Richer, fattier fish prepared with more intense flavors
- Cured meats and cheeses, both fresh and aged
- Pasta dishes with sauces featuring stronger flavor components
