A delicate and refined flavour, gray in colour. Its suave flavor makes it ideal as a pairing at dinnertime or as a beginning caviar for novices.

Produced by a white American sturgeon. Its eggs are medium-large and can reach up to 3mm in size.
Ideal as the starting variety in a vertical of different selections of caviar.
